Notes from You

During the last 2 years I have realized that competing is much more of a mental challenge than a physical one.  I have also learned that my number one competitor is actually me.  I believe that if you are able to discover the emotional reasons of what makes you inspire to be successful in life, that this is what separates the winners from the losers. 
In my opinion the key to being successful is setting goals, maintaining a positive mindset, being consistent, and never giving up.  Your emotional will is what keeps you strong when you are starting to lose focus of your goals.  Speaking of goals, you must set them before you can achieve them. With that being said I sometimes find myself fighting the process of sacrifice and wanting everything NOW, NOW, NOW.
It does not mean as much if you do not enjoy and embrace your journey while concurring the goal.  Be better than you were the day before and remember to have fun while doing so.  Go all in and give nothing less!

Pineapple Chicken Kabobs

  • 2 (6 Oz.) (168g) boneless, skinless chicken breasts, cut into 1 inch cubes
  • 1/4 cup (60mL) canola oil, divided
  • 1 Tbsp. (15mL) Mrs. Dash® Extra Spicy Seasoning Blend
  • 1 Tbsp. (15mL) Mrs. Dash® Chicken Grilling Blend™
  • 1 1/2 Tbsp. (22.5mL) freshly squeezed lime juice
  • 2 Tbsp. (30mL) finely grated fresh ginger
  • 1 cup (240mL) canned pineapple chunks, water packed
  • 8 green onions, bottom 2 inches (5cm) only, cut into 1 inch (2.5cm) long pieces
  • 1 red bell pepper, stem and seeds removed, cut into 1 inch (2.5cm) squares
  • 4 bamboo skewers, 12 inches (30cm) long
Directions:
  • Place chicken in a resealable storage bag. Add 2 Tbsp. (30mL) oil, lime juice, ginger and Mrs. Dash® Extra Spicy, squeeze out air and seal bag.
  • Massage bag so that seasonings coat chicken evenly. Marinate in the refrigerator for 1 hour.
  • Soak bamboo skewers in water while chicken is marinating.
  • Remove chicken and discard marinade. Season chicken with Mrs. Dash® Chicken Grilling Blend™. Assemble kabobs, alternating pieces of chicken, bell pepper, pineapple and green onion. Brush with remaining oil.
  • Grill or broil for 6 minutes, turning skewer over and grilling on other side for additional 6 minutes or until chicken is cooked throughout.
  • Serve over steamed white rice if desired.
